Hi Maggie, I stumbled onto your page while on a quest to find the perfect vegetable and noodle sauce.. mine never balance out properly either too salty or sweet and the restaurants don’t specify what “flavour” sauce they use.. theirs can be a bit greesy but I am okay with that, if anything it makes the dish more comforting! Lol any suggestions on how to recreate it?

The recipe uses beef but the sauce is super nice and I’m sure you can use it with vegetables only. Not sure if you can eat oyster sauce but if you need vegan/vegetarian replacement, you can find vegetarian oyster sauce (or called mushroom sauce) pretty easy. Chicken stock or vegetable stock will work to replace beef stock.
Maggie,is that possible to share Langmen noodle(authentic uygur lamb noodle Recepy)please. I like uygur food,however it takes 1 hour min to travel .i wish I can make it at home anytime I miss the food.thank you
