I got to know 50 Hertz Sichuan pepper oil about a year ago and since then it has been a pantry staple in my kitchen. If you’re familiar with Sichuan peppercorns but haven’t tried Sichuan pepper oil, I highly recommend adding it to your Chinese pantry.
About Sichuan Pepper Oil
Sichuan pepper is a key ingredient in Sichuan cuisine. Different from chili pepper, which adds spiciness to a dish, Sichuan pepper (or Sichuan peppercorn) adds a citrusy numbing tingling sensation that is very unique and different from the other species out there.
There are two types of Sichuan Peppercorns – red and green. In most of my recipes, I call for the red type, which is more commonly used and easier to find outside of China. The two peppers are distinct varieties with distinct flavors. The red one is warm and has an orange undertone, while the green one is a bit more grassy and has crisper citrus flavor.
Sichuan pepper oil is very fragrant and a bit numbing. It is much like extra virgin olive oil or toasted sesame oil in the way you use it to finish dishes. Only a little bit is needed to enhance your dish and make it irresistible.
About 50 Hertz
When scientists at the Institute of Cognitive Neuroscience at University College London studied Sichuan pepper in 2013, they found that the “frequency of the tingling induced by Sichuan Pepper was consistently at around 50 Hertz”, giving rise to this company’s name.
The tingling sensation is caused by a molecule called hydroxy-α-sanshool. While we humans have nerve endings all over our skin, this aromatic molecule can only reach those nerve receptors where the skin is very thin, such as on the mouth and lips. This is why we experience a stimulating and pleasant sensation when we taste Sichuan Pepper.

How to use Sichuan pepper oil
The best thing about Sichuan pepper oil is that you can use it on almost anything. From noodles to stir fries, and from pizza to popcorn.
To give you a few examples of how I have used the Sichuan pepper oil to add more vegetables to my meals:
- Stir fry summer squash in olive oil with garlic and a pinch of salt, then finish it with green Sichuan pepper oil
- Replace the sesame oil with Sichuan pepper oil in the sesame noodle sauce and use it as a steamed veggie dipping sauce
- I used scrambled tempeh to replace ground meat to make basil chicken and finished it with Sichuan peppercorn oil. The oil adds so much flavor to the dish that I didn’t miss the chicken at all
- Use Sichuan pepper oil to replace the bonito dashi in my daily miso soup to add a kick to the soup and also make it vegan
You can also drizzle the oil onto your congee, mapo tofu, dan dan noodles, and cucumber salad to further add a fragrant taste. The ways to use this oil are limitless!
