Despite the fact that I love this time of year, when we are busy shopping for gifts for our loved ones, wrapping up the year’s work, and getting ready for the holidays, searching for recipe ideas can get a bit overwhelming.
That’s why I’m teaming up with House Foods on National Stress Awareness day to share this easy, fast, and delicious 5-Ingredient Coconut Noodle Soup with you guys. I developed this recipe just to remind you that it’s very possible to make hearty, healthy meals with very little time and prep.

Almost-zero-calorie noodles
Before jumping to the recipe, I want to introduce a magical ingredient that I always keep on hand – House Foods Tofu Shirataki Noodles. This type of noodle is made with the flour of konnyaku (an Asian yam) and tofu. The magical thing about this product is that it contains next to zero calories – merely 20 per bag.
These noodles are a close relative to the traditional Asian shirataki noodles, which we also call zero-calorie noodles because they contain zero calories.
In Asian cooking, the traditional shirataki noodles are a staple in soup and hot pot because they add a more interesting texture to the dish. However, the noodles do have a crunchy, jelly-like texture, which makes them taste less like regular noodles.
I enjoy using House Foods Tofu Shirataki Noodles because they have a nicer texture. They also come in four different types – spaghetti, fettucini, angel hair, and macaroni, which work great in different types of dishes.
When you cook these noodles with the right ingredients, they are very delicious and filling. For example, in this 5-ingredient coconut noodle soup. If I’m feeling hungry late at night, I’ll have no guilt eating a big bowl of this soup because it’s so healthy.
Cooking note
This recipe requires as little as 5 ingredients, but it yields a hearty, delicious pot of noodles that is also filling and nutritious. It’s such a versatile recipe and you can totally tweak it with other ingredients you have on hand. For example, I also enjoy adding a handful of greens, such as spinach or kale, at the end of the cooking, to add some color and nutrition. You can also use winter squash to replace the sweet potato. Ingredients such as mushrooms and bamboo shoots add great texture to the soup and make it even tastier.

5-Ingredient Coconut Noodle Soup
Ingredients
- 3 cups vegetable broth
- 1 small sweet potato , cut into bite-sized cubes (yields about 1 cup)
- 1 teaspoon ginger , minced
- 1 pack House Foods shirataki noodles I used the fettucini but the other types work, too, drained and rinsed with tap water
- 1 cup coconut milk
- 1/4 teaspoon salt (or to taste)
- 1 tablespoon chopped cilantro for garnish (Optional)
Instructions
- Add vegetable broth to a medium-sized pot. Heat over medium-high heat.
- Cut sweet potato and ginger, then add it to the soup.
- When the soup starts to boil, turn to medium-low heat and simmer for 5 minutes, or until the sweet potato turns tender.
- Add the shirataki noodles, coconut milk, and salt. Cook for 1 minute, until the soup and noodles are just heated through. Taste the broth and adjust seasoning by adding more salt, if needed.
- Garnish the soup with cilantro, if using. Serve hot as a light main dish or a side.
