What’s included in the spice set
Xinjiang-Style Chinese BBQ Blend (Shao Kao Spice) – This small-batch, handcrafted skao kao spice blend is in the style of Xinjiang cuisine, featuring cumin grown in Xinjiang and chiles from Guizhou backed up with plenty of premium Sichuan pepper, sesame, black cardamom, and other Chinese spices, along with umami-heavy mushroom powder and just the right amount of salt. You can use it to make lamb skewers, grilled potato and veggies, or simply use it on anything to fry up in your air fryer.
Sichuan Peppercorns in Grinder – A large glass pepper mill with a unique, slightly octagonal design and filled with premium da hong pao Sichuan pepper. If you love Sichuan food or simply want to make very flavorful dishes, this one is a must-have. Since I discovered this grinder, I started to use it instead of whole Sichuan peppercorns. Not only does it make prep and cooking faster and easier, the result is an intensive numbing flavor that I love while using less Sichuan peppercorns. Sichuan Dipping Chile – This ready-to-eat spice blend makes a frequent appearance in Sichuan, served as a dry dip with Sichuan hot pot, and especially with the kind of hot pot called chuan chuan where the food is cooked on skewers. It is also sprinkled on and served alongside Sichuan-style shao kao BBQ. For everyday use, simply sprinkle it on a plate of roasted potatoes, a bowl of noodle soup, or anything fried to spice it up.

My experience
Back when I was living in Austin, Texas, I had a hard time finding fresh Sichuan peppercorns before The Mala Market opened for business. And the first time I received a package from them, I was surprised and delighted by the freshness of the spices. Since then I’ve been using the Sichuan peppercorns and dried chili peppers from them only, because they are sourced directly from Sichuan and the quality is so high.
Over the years, they have kept consistently high quality and now I’m so happy to see that they are expanding their product line to include more ready-to-use spice blends and sauces!
