Now that the weather has cooled down, it’s officially hot pot season. Hot pot parties are one of the most popular activities in China during winter (and any time of year!). Not only is it perfect for gatherings and celebrations, it’s actually a common way to enjoy dinner when we do not feel like cooking. Because you simply need to buy your favorite ingredients from the market and do a bit of prep to have an indulgent and hearty dinner in no time.
In China, the most popular hot pot is the type with the divider. So you can use two types of soup base to make sure everyone at the table has their favorites.

My experience
Back when I was living in Austin, Texas, I had a hard time finding fresh Sichuan peppercorns before The Mala Market opened for business. Since then I’ve only been using Sichuan peppercorns and dried chili peppers from them, because they are sourced directly from Sichuan and the quality is so high.

I love hotpot! With covid restrictions, some restaurants in my area have closed down and we haven’t been able to dine in all year. I really miss having boiling spicy soup to share with my family.
