Ginger green beans is an appetizer with crisp blanched green beans in a refreshing gingery sauce. It is very easy to put together and it pairs well with any main dish to make a balanced meal. {Gluten-Free, Vegetarian / Vegan Adaptable}To make this dish vegetarian / vegan, use mushroom powder or salt to replace chicken bouillon powder.
Ingredients
1/2lb (225g)string beans, tough ends removed
2teaspoonsrice vinegar
1teaspoonsoy sauce
1teaspoongrated ginger
1/2teaspoonchicken bouillon powder(or mushroom powder, or 1/4 teaspoon salt)
1/4teaspoonsugar
Instructions
Add water, pinch of salt, and a few drops of vegetable oil to a big pot. Bring to a boil. Add the string beans. Boil until the string beans are al dente, 5 minutes or so, or reach your desired texture. Drain the string beans and soak in cold tap water to stop cooking. Then drain, pat dry with paper towels, and transfer to a shallow bowl.
Mix the rice vinegar, soy sauce, sugar, ginger and chicken bouillon powder together in a small bowl. Pour it over the string beans. Mix well. Serve at room temperature as an appetizer or side.
