5-Minute Blistered Shishito Peppers (Using a Waffle Maker)

I learned this recipe from my friend at Melissa’s Produce. The recipe does not grill a ton of peppers at the same time, but enough for two people to snack on. Plus it takes no time to grill another batch if you want to cook more.

Ingredients

  • 2 cups shishito peppers
  • Sea salt
  • 1 teaspoon olive oil

Equipment

  • Waffle maker (or panini iron)

Instructions

  • Combine shishito peppers, pinch of salt, and olive oil in a bowl. Toss to mix well.
  • Arrange peppers on a waffle maker with minimum overlap. Cook until the peppers are blistered and tender, 5 to 8 minutes.
  • Transfer the peppers into a bowl and sprinkle on a bit more salt.
  • Serve hot or cold as an appetizer.
